This is a post I will be sharing with my AWESOME fitness-minded cousin, Shereé. She has a cool new Facebook group called Knockout Fitness and Health and asked for a quick, easy recipe so HERE IT IS.
Some history behind this recipe: I just bought a veggie spiralizer. You may be asking...what the crap is that? Well, it's an awesome little gadget that takes zucchini, carrots and sweet potato and cuts them into a spiral shape that is very noodle-esque. It's great stuff! There are tons of them out there, and this is the one I bought.

Anyway, with said slicer, I made a delicious quick soup! So delicious, I wanted to share the recipe (plus Shereé asked for it).
ZUCCHINI NOODLE RAMEN SOUP!
1 medium zucchini
1 medium carrot
3 green onions
4-5 mushrooms
1 packet miso soup mix
1/2 block tofu
Spiralize the zuke, then slice the carrots, onion and mushrooms. In a large bowl, put the noodles down as a base, then top with the veggies and the packet of miso soup mix. Boil water in a kettle and, once boiling, carefully fill the bowl with water (CAREFULLY). Mix with chopsticks or a fork.
Eat.
Enjoy.
Is that simple or WHAT? You could switch up the veggies too if you like. The goal of this recipe was to be simple but if you want to go to town, go to town! Do all kinds of crazy stuff! Take a picture like I did!
